Ingredients:

  • 1 kg beef or rabbit, cut into cubes
  • 1 kg small onions, peeled
  • 4 cloves of garlic, chopped
  • 1 can of chopped tomatoes (400g)
  • 1 cinnamon stick
  • 4 cloves
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the meat and brown on all sides.
  2. Remove the meat from the pot and set aside.
  3. In the same pot, add the onions and garlic and cook until they start to soften.
  4. Add the canned tomatoes, cinnamon stick, cloves, bay leaf, oregano, thyme, red wine vinegar, and honey to the pot.
  5. Stir well and add the meat back to the pot.
  6. Season with salt and pepper to taste.
  7. Reduce the heat to low and cover the pot with a lid.
  8. Let the stew simmer for 1 1/2 to 2 hours, or until the meat is tender and the sauce has thickened.
  9. Serve hot with a side of crusty bread, potatoes or rice.
