Ingredients:
- 1 kg beef or rabbit, cut into cubes
- 1 kg small onions, peeled
- 4 cloves of garlic, chopped
- 1 can of chopped tomatoes (400g)
- 1 cinnamon stick
- 4 cloves
- 1 bay leaf
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tbsp red wine vinegar
- 1 tbsp honey
- 2 tbsp olive oil
- Salt and pepper
Instructions:
- Heat the olive oil in a large pot over medium-high heat. Add the meat and brown on all sides.
- Remove the meat from the pot and set aside.
- In the same pot, add the onions and garlic and cook until they start to soften.
- Add the canned tomatoes, cinnamon stick, cloves, bay leaf, oregano, thyme, red wine vinegar, and honey to the pot.
- Stir well and add the meat back to the pot.
- Season with salt and pepper to taste.
- Reduce the heat to low and cover the pot with a lid.
- Let the stew simmer for 1 1/2 to 2 hours, or until the meat is tender and the sauce has thickened.
- Serve hot with a side of crusty bread, potatoes or rice.
